- 6 medium potatoes (Yukon Gold or Russet)
- 1 cup Hellmann’s mayonnaise
- 2 tbsp mustard (yellow or Dijon)
- 3 hard-boiled eggs, chopped
- 2 stalks celery, diced
- ½ small onion, finely chopped
- 2 tbsp pickle relish (optional)
- Salt and pepper, to taste
Instructions
- Peel and cube the potatoes, then boil them in salted water until fork-tender. Drain and let cool completely.
- While the potatoes cool, chop celery, onion, and eggs.
- In a mixing bowl, whisk together Hellmann’s mayonnaise, mustard, salt, pepper, and pickle relish if using.
- Combine the cooled potatoes, chopped veggies, and eggs in a large bowl. Pour the dressing over and toss gently to coat.
- Cover and chill in the refrigerator for at least one hour before serving.
