Ingredients

  • 6 medium potatoes (Yukon Gold or Russet)
  • 1 cup Hellmann’s mayonnaise

  • 3 hard-boiled eggs, chopped
  • 2 stalks celery, diced
  • ½ small onion, finely chopped
  • 2 tbsp pickle relish (optional)
  • Salt and pepper, to taste

Instructions

  • Peel and cube the potatoes, then boil them in salted water until fork-tender. Drain and let cool completely.
  • While the potatoes cool, chop celery, onion, and eggs.
  • In a mixing bowl, whisk together Hellmann’s mayonnaise, mustard, salt, pepper, and pickle relish if using.
  • Combine the cooled potatoes, chopped veggies, and eggs in a large bowl. Pour the dressing over and toss gently to coat.
  • Cover and chill in the refrigerator for at least one hour before serving.
