- 12 large mushroom caps (e.g., cremini or button mushrooms)
- 1 cup cooked shrimp, finely chopped
- 1/4 cup cream cheese, softened
- 1/4 cup breadcrumbs (plus extra for topping)
- 1 clove garlic, minced
- 2 tbsp grated Parmesan cheese
- 1 tbsp fresh parsley, chopped (plus extra for garnish)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the mushroom caps and remove the stems. Set the caps aside and finely chop the stems.
- Heat olive oil in a skillet over medium heat. Sauté the chopped mushroom stems and garlic until softened.
- In a mixing bowl, combine the cooked mushroom stems, chopped shrimp, cream cheese, breadcrumbs, Parmesan, parsley, salt, and pepper. Mix until well incorporated.
- Fill each mushroom cap with the shrimp mixture and place them on a baking sheet.
- Sprinkle extra breadcrumbs and Parmesan on top for added crunch.
- Bake for 20-25 minutes or until the mushrooms are tender and the filling is golden.
- Garnish with fresh parsley and serve warm.
