  • 12 large mushroom caps (e.g., cremini or button mushrooms)
  • 1 cup cooked shrimp, finely chopped
  • 1/4 cup cream cheese, softened
  • 1/4 cup breadcrumbs (plus extra for topping)
  • 1 clove garlic, minced
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped (plus extra for garnish)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Clean the mushroom caps and remove the stems. Set the caps aside and finely chop the stems.
  • Heat olive oil in a skillet over medium heat. Sauté the chopped mushroom stems and garlic until softened.
  • In a mixing bowl, combine the cooked mushroom stems, chopped shrimp, cream cheese, breadcrumbs, Parmesan, parsley, salt, and pepper. Mix until well incorporated.
  • Fill each mushroom cap with the shrimp mixture and place them on a baking sheet.
  • Sprinkle extra breadcrumbs and Parmesan on top for added crunch.
  • Bake for 20-25 minutes or until the mushrooms are tender and the filling is golden.
  • Garnish with fresh parsley and serve warm.
